Eatings of the week
I was feeling like Indian food this week, so I broke out an old recipe that I only had made once before (when we lived in Scotland). It was great though, so I was wondering why it’s taken me so long to redo it. I think in Scotland there were so many wonderful Indian restaurants that we often ate out. This recipe is called Garam Masala Vegetables. It’s basically red potatoes, diced tomatoes, carrots, peas, veggie broth, and a bunch of Indian seasonings. I served it next to long grain brown rice. The recipe is taken from an old Cooking Light cookbook of mine called Superfast Suppers. It actually has a lot of vegan recipes in here that I love. I used to subscribe to Cooking Light magazine as well. I was thinking I might start that back up, and just hope for vegan recipes each month. For an appetizer, I bought Baji’s Papadums (mango chutney seasoned papadum chips) and served them with Wild Thymes, Apricot Cranberry Walnut Chutney. Indian night’s have returned!!!
And then it was Taco Salad night. First I broke tortilla chips up on the bottom of the plate. Then I layered on: iceberg lettuce, whole wheat fusilli pasta, heirloom tomatoes, red onion, black beans, Lightlife taco crumbles, sliced avocado, and a scoop of vegan sour cream. Drizzled with vegan French dressing, this salad makes a great dinner any time of year.
Eric claimed a night this week to be in charge of dinner. So sweet! He got us sushi and salad from Sushi Zushi.
Things were crazy at school this week, so I didn’t catch a photo of my lunch every day, but I was actually good about making creative lunches (and not taking leftovers EVERY day). I heated up an Amy’s frozen scrambled tofu pocket and had it with a side of refried beans (vegan and fat free), brussel sprouts, and carrots. My dessert was chocolate soy pudding. Yum!
Another day I made a wrap with an Ezekiel sprouted grain tortilla. I put hummus, sweet potato, vegan mayo, broccoli, and lettuce on it. On the side I munched on raw carrots and veggie chips. My dessert was a wee piece of Joy’s Chocolate Cake from Whole Foods. I got the piece of cake for Eric the night before as a surprise after his long run.
This was a delicious lunch!!
Scotland-like Saturday
Today it was overcast all day. We were suppose to get some of the storms from Hurricane Ike, but that never really occurred. It was a bit windy all day and wet, but it pretty much just barely drizzled all day. It felt just like a normal Glasgow, Scotland day. So cozy!
I was so excited for breakfast this morning because I was having oat bran for the first time! It was YUMmy! Very similar to oatmeal, but with a unique texture. It’s finer. I made it with water in the microwave. When done, I added cinnamon, pumpkin spice, sliced bananas (I ate the other 1/2 of the banana with almond butter while I was waiting on the oat bran), and vanilla soymilk. It was interesting because I had a packet of Stevia sweeter on the side in case I needed it. When I make quick oatmeal or steel-cut oats, I always have to add a packet of sweeter. However, with the oat bran I did not. I don’t know why this is exactly, but it was plenty sweet on its own and with the added soymilk. I’m a fan! I love how healthy the oat bran is. It seems to have a bit more fiber and protein than oatmeal. It also kept me full for a very long time, which was nice. Sometimes oatmeal can digest so fast that you get hungry pretty soon after eating it.
For lunch I had the Mediterranean combo salad from Whole Foods. It comes with hummus, grape leaves, bulgur salad, olives, tomatoes, and mixed leaves. Awesome! I buy this often.
I had dinner from Sushi Zushi . I forgot to take a picture…so sorry. I had a vegetable roll, rolled maki-style (with the seaweed on the outside), edamame, and miso soup.
Supper Time
Here’s what we’ve been eating for dinner this past week…
Creamy Spinach Pasta from The McDougall Quick and Easy Cookbook and a lovely summer salad with fresh corn and carrots.

Field Roast vegan sausage, sauerkraut, mashed potatoes (made with soymilk and seasonings), and a wee little bowl of mixed beans and corn.

Spiral Diner to-go for fun in the middle of the week. Eric went on a long run, and I surprised him by picking up two wraps that we shared for dinner. The one on the left was the “Ate Layer Burrito”, and the one on the right was “Sweet Luv’Us Hummus”. These were both wraps that we had never tried before, and they both get thumbs up. The burrito was the best though! It had a chipotle mayo on it that was delish. I definitely recommend it and will get it again.

You just can’t go to Spiral without picking out some dessert. We had one of their famous brownies and a carrot cake cupcake.

This is one of my FAVORITE meals to make on a busy night. It is so delicious and simple, if you try it, you’re sure to make it a regular thing at your house as well! Corn tortillas with refried beans spread on top, baked or microwaved sweet potatoes, spinach leaves, and green salsa. Go ahead….try it! It tastes so delicious!! Fresh corn on the cob was for the side.

We usually eat out Friday and Saturday night’s, so this is what we feasted on this weekend. Friday night we went to Sushi Zushi , to get some great edamame and sushi. We got a veggie roll, a pickled plum roll, and Eric got a spicy vegetable tempura roll, which is not vegan because it has some mayo sauce on it (just to warn you). 
If you live in Dallas and are vegetarian, I’m sure you’ve heard of Kalachandji’s . If not, it is Dallas’s oldest and most renowned Vegetarian restaurant. It’s almost completely vegan too. They have a couple of things that aren’t vegan, but they are always marked. On Saturday and Sunday’s they even offer a vegan dessert. This time was apple crisp (sorry no picture of that). It’s a buffet offering mixed veggies, rice, various Indian curries, homemade vegan raisin bread, and an amazing salad bar as well (in the brown bowl). I took pictures of both of our plates. It was a feast! They have the cutest garden to eat around outside, and we loved listening to the live guitarist that was playing. Kalachandji’s does not disappoint.
